Pumpkin Chocolate Chip Muffins

  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 1/4 cups sugar
  • 2 large eggs
  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup vegetable or canola oil
  • 2 teaspoons vanilla extract
  • 1 Β½ cups chocolate chips (milk or dark – your choice!)


  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • In a small bowl, whisk together the flour, baking soda, salt and pumpkin spice.
  • In a large bowl, whisk together the sugar and the eggs until combined. Whisk in the pumpkin puree. Whisk in the oil and vanilla extract until smooth.
  • Stir in the dry ingredients until just combined – do not overmix! Stir in the chocolate chips.
  • Fill the muffin tins about ΒΎ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!


      1. It sure does. I might make some later today. I have been eating carrot loaf, I had one in the freezer. The snow has stopped here, but it is cold and gray. A great day to snuggle up and read.

  1. Pumpkin puree in cans? Not in New Zealand my friend. But I have pumpkin that needs using so I think that I will make some for Pete’s lunches. I am not going to eat any. Not one. Well, maybe one, just to taste test. πŸ˜‚πŸ€£ What spices did you use Susan, as pumpkin pie spice isn’t available here either. 😍

    1. No pumpkin puree in cans? Do you only have fresh pumpkin?😳 These are so delicious! I dare you to make them and not eat one! The smell in your house will drive you crazy. Okay so for the pumpkin spice I followed Betty Crocker’s recipe:

      3 tablespoons ground cinnamon
      2 teaspoons ground ginger
      2 teaspoons ground nutmeg
      1 Β½ teaspoons ground allspice
      1 Β½ teaspoons ground cloves
